I love summer because it’s official: You’re supposed to be lazy. There’s probably never a better time to unleash the inner sloth that lurks beneath your productive, sparkling exterior. In my case, laziness is a year-round season countered by guilt and the ambition to survive. That’s why you get to read these newsletters as often as you do. Otherwise, I’d be on a beach somewhere, living the endless summer.
Luckily, if you want to take it easy and avoid the slog of everyday meals, nature cooperates by filling the markets with produce that will help you make supper out of a single ingredient or two: Tomato slices and mozzarella on toast with fresh basil, corn on the cob X 2 and a salad, and sandwiches of every stripe. Bring on the rosé.
I’ve got a few ideas here to lighten the load of summer cooking that is, um, actual cooking. But they’re not too taxing. Take these ideas with you on vacation or make them at home when you’re wishing you were on vacation (that would be me).
