Let’s kick off tomato season with something easy
I don’t know about you, but holidays wear me out.
Even though this July 4th was a quiet one for us, I don’t feel much like cooking for the rest of the weekend. But if it only takes me about 10 minutes to put dinner together, then I’ll make the effort. I hate ordering take-out. It’s always so disappointing. I can make an easy supper that would equal the time it would take to order and pick up a meal made by someone else. I know what’s in it, and I know it will be good. And in these times, it’s easy on the budget, too.
I’m so excited to start cooking with summer tomatoes. It’s a carpe diem moment if ever there was one. I suppose if tomatoes were bursting with juicy deliciousness all year long they might not seem so special. But I’m doing a little dance at my local farm market when I see them popping up in all their glory.
