Mi dispiace, Mom, but I didn’t brown the meatballs.

We’re past the halfway mark in February, and it’s still freezing here. But the promise of spring is in the sky. Officially, as my mom used to remind me, we get 3 more minutes of sunlight every day in February. I find that to be profoundly cheerful.

Despite a mood shift from dark and dreary, I haven’t felt much like cooking. That’s when I turn to my easiest, fastest recipes.

For instance, these turkey meatballs. I know, meatballs seem like they would be soooo labor-intensive. But a cookie scoop and a good brand of tomato sauce in a jar win the day. Extra credit if you want to add a few more minutes for a homemade sauce.  Here’s the deal: don’t brown the meatballs.
