In case you missed a treat on Mother’s Day yesterday (I hope you didn’t) let’s make a cake. Is there any day that doesn’t need cake? I’ve come around to an answer to that question. Pies, cookies, and even a bowl of something cold and sweet are all well and good. But it turns out, I have not given cake its due, falling back on other sweets and dismissing an easy, attainable loaf cake, free of gooey icing or toppings. Simple. Portable. Restrained.
